How to Measure Flour Correctly for Better Baking

Keep the recipe's gram amount whenever you own a scale
A gram tells you how heavy something is. A cup tells you how much room it takes up. The two only connect once you know how much of that particular ingredient fits into one cup. Fine, dense powders pack far more weight into a cup than light, flaky or irregular ingredients.
All-purpose flour is usually taken as 120 g per cup when it is spooned in and levelled. Granulated sugar sits near 200 g, butter around 227 g, and honey close to 340 g. That means the same 200 g of ingredient is roughly 1.67 cups of flour, 1 cup of sugar, 0.88 cup of butter or 0.59 cup of honey.
Preparation words matter as much as the ingredient name. Packed, sifted, chopped, melted and whole are part of the definition, not decoration. Pick the closest match in our density data before you divide.
Divide the weight by the grams per cup. For 300 g of all-purpose flour at 120 g per cup, 300 ÷ 120 = 2.5 cups. For 150 g of granulated sugar at 200 g per cup, the answer is 0.75 cup. Keep the decimals until the very end, then translate the result into a fraction you can measure.

Do not swap millilitres into this formula. Millilitres describe volume and say nothing about what a dry ingredient weighs. The grams-per-cup value is what links weight to volume for that one ingredient.
All-purpose flour rather than flour, packed brown sugar rather than sugar, rolled oats rather than oats. Small wording changes point to different cup weights.
Use the US cup for American recipes. A metric cup is 250 ml and a Japanese cup is 200 ml, so mixing standards adds an avoidable error.
Take it from the recipe author when they publish one, otherwise from a trusted density chart such as ours.
Hold two or three decimal places so early rounding does not compound across several ingredients.
Round to the nearest familiar fraction when it is close, and use tablespoons for awkward remainders. One cup is 16 tablespoons.
When a recipe gives both grams and cups, trust its grams. The author tested with a particular brand and filling method, and a general chart is only a stand-in for that.
Brand, moisture, particle size, settling and the way you fill the cup all move the final weight. Flour is the most sensitive of the group. If a converted batter looks much drier or wetter than the photo, check the ingredient type and reference value before adding more liquid or flour.
Keep weights for bread formulas, macarons, pastry, caramel, candy and any large batch where a small ratio shift changes structure. Sticky ingredients are also easier by weight because you can drop them straight into the bowl instead of scraping a cup clean.
Cup conversions shine when no scale is in the kitchen, when a familiar volume helps you picture an amount, or when you are writing the recipe out for someone who only owns cup measures. They are a convenience layer on top of the weight, not an upgrade.
A cup is a volume. Only ingredients whose cup weight lands near 240 g give that answer, such as water and milk.
Water shortcuts fail for flour, sugar, fats, grains and syrups because their densities are all different.
A tidy-looking number cannot remove the variation created by scooping, packing, brand and humidity.
Identify the ingredient, use its grams-per-cup reference, divide, and round only at the end. Cup conversions are a dependable backup, but the original gram measurement is still the shortest route to a repeatable bake.
