How to Scale a Recipe Up or Down Accurately

10 min readScaling goes wrong for predictable reasons: the multiplier is applied unevenly, ingredients stay in cups, eggs land on fractions, and the batter goes into a pan that cannot hold it. Fix those four and a recipe travels between batch sizes cleanly.

Find the scaling factor

Divide the yield you want by the yield the recipe gives. Twelve cupcakes from a recipe for eighteen is 12 ÷ 18 = 0.67. Thirty from twelve is 2.5. Use that single number on every ingredient and resist adjusting anything by feel until the batter is in front of you.

Convert to grams before you scale

Two thirds of ⅔ cup is a puzzle. Two thirds of 150 g is 100 g. Rewrite the ingredient list in grams first, then multiply, and you avoid compounding rounding errors across eight lines.

Eggs, leavening and seasoning need judgement

  • Eggs: crack, beat and weigh. A large egg is about 50 g out of shell, so half an egg is 25 g.
  • Baking powder and soda: scale them, but taste-test large increases — over 3× often reads soapy or metallic.
  • Salt and spice: scale to about 80–90% and adjust upward at the end.
  • Vanilla, extracts and spirits: scale conservatively, they intensify faster than the rest.
  • Yeast: for much larger doughs slightly less than proportional is safer, since bulk dough ferments warmer.

Match the pan, then the time

Batter fills a pan by volume, so compare base areas rather than diameters. A 20 cm round has an area of about 314 cm² and a 23 cm round about 415 cm², a factor of 1.32. Keep the batter depth similar to the original and the bake time stays close.

If depth increases, lower the oven by 10–15 °C and expect a longer bake. If it decreases, check early. Two identical pans side by side is nearly always safer than one deep one.

When not to scale in one batch

  • Caramel and candy, where a deeper pan changes how heat and moisture behave
  • Custards and curds, which cook by depth and need constant attention
  • Meringue and whipped bases beyond your mixer's bowl capacity
  • Enriched breads whose mixing time changes sharply with dough mass
  • Anything limited by pan or oven space — bake in sequence instead

Common misconceptions

Double the ingredients, double the time

Time follows depth. Two pans at the original depth bake in roughly the original time.

Fractional eggs have to be guessed

Beat an egg and weigh out the grams you need. It takes ten seconds and is exact.

Any pan will hold a bigger batch

Overfilled pans dome, spill and stay raw in the middle. Compare capacity before you mix.
